Everflyht Duo
The first wine is the Everflyht Brut NV which reflects the current estates planting which combines Pinot Noir, Chardonnay and Meunier; hand-picked from our single estate vineyard and created in a low intervention method while using steel tanks and new and old oak to bring the best from each variety and block. Fresh and generous complexity in style, this traditional method wine has been aged for 20 months on the lees bringing a robust depth with a lasting elegance to the wine.
The second wine is our beautiful Late Release Edition 1, which is a blend of our Pinot Noir, Pinot Meunière and Chardonnay, hand picked from our single estate vineyard and spilt between steel tanks, old burgundy barrels and two new french oak barrels. The wine was fermented in barrel and then aged for a further 10 months before blending in August 2020. This traditional method wine has been on the lees for an extra 22 months compared to the Brut NV. As a result the sparkling wine has developed a rich golden colour with fine consistent bubbles and generous aromas of fresh pastry, red apple, lightly stewed fruits and rich butter that lend the wine its weight and structure. An excellent addition to our Everflyht family.
